French Onion Soup

If you want to sound fancy, without that much work, then this slow cooker French onion soup recipe might be just the trick.

Ingredients:

  • 1/4 cup butter
  • 1/2 tsp thyme
  • 3 lg bay leaves
  • 1 tsp garlic powder
  • 4 large yellow onions, cut in half and sliced length-wise
  • 2 quarts (2 X 900ml) of beef broth - conveniently, tetra packs of broth come in this size.
  • 1.5 cups of red wine (basic table wine is fine - leftover wine from an event that you don't want to just throw away is great for this purpose)
  • Gruyère cheese (optional)

Preparation:

  1. Turn on slow cooker on high.
  2. Melt butter in slow cooker.
  3. Add onions & spices.
  4. Cook onions until they are softened and somewhat see-through.
  5. Remove bay leaves.
  6. Add wine and leave the cover off to let the alcohol evaporate. Takes about 10 minutes.
  7. Add beef broth.
  8. Cook for 4-5 hours, longer will not affect the taste of the dish.
  9. Serve in soup bowls or
  10. Add Gruyère.
  11. For added effect, use oven-safe bowls and melt Gruyère for a few minutes by setting the oven to "broil". Of course, proper French onion soup bowls add to this effect.

This recipe is easy, tastes amazing and it's surprisingly filling on its own. It also freezes very well if you want to save some for later.
