Turkey & Tomato Chipotle

 

Evan M., a friend of CCF's from Montana*, who Hélène met while on a trip to New Orleans this Fall, has volunteered a recipe adaptable to the slow cooker that he received from his brother-in-law (oh, and he just happens to also be a professional chef!).

We'll add a picture once we've made it ourselves, but here's the recipe for now because we don't want to keep your taste buds waiting:

Ingredients:

  • 2T Olive Oil
  • 1 large onion, chopped
  • 5 cloves garlic, minced
  • 2 cans tomatoes
  • 1 lb Ground Turkey
  • 2 cans great northern beans
  • 1 Qt (900 ml) chicken broth
  • 1/2 Can Chipotle in Adobo
  • Salt and Pepper to taste

Preparation:

  1. Heat oil
  2. Add turkey and cook through
  3. Add onion, garlic, tomato, and cook down until tomatoes are well cooked down, stir frequently
  4. Add beans and chipotles
  5. Cook slowly until the consistency you like, about an hour
  6. Season to taste with hot sauce, salt and pepper
